le maréchal, a 4* hotel in the centre of colmar and its restaurant L'Echevin are a local institution and have been owned by the same family for over 40 years. 

The restaurant is a member of the culinary college of France and of the Collectionneurs and offers a catering service based on Alsatian cuisine, gastronomic for dinner and bistro for lunch. The kitchen and dining room brigades (9/5) provide an average of 215 covers at lunchtime and 45 to 50 in the evening with a peak of 100 covers on weekends. 

Following the departure of the chef after 2 years, we are looking for his replacement who will be able to put his stamp on this beautiful address which has been awarded 13/20 by Gault et Millau.

"It is one of the most beautiful houses in the city, not to say in Alsace. This hotel which stands proudly on the water has its titles of majesty and its table keeps its good looks, even if the time is less than before for unbridled luxury. On the contrary, the bill would tend to be wise on compositions that are nevertheless well worked out: sphere of crab cucumber and avocado pistou of herbs and pine nuts, sea bass cooked like a bouillabaisse with a rouille sauce with Alsatian saffron, stuffed quail with crispy cabbage and grape juice spiked with sweet garlic. Some vegetarian dishes, good service, a tasting menu that starts at €50 for three courses."


Mission

Under the direction of the Operations Manager, your role will be to :
- To guarantee the best level of service to a demanding and gourmet clientele.
- Supervise the front of house staff and ensure good coordination between the front of house and the kitchen.
- Ensure the proper economic management of the restaurant.
- Participate in the management of human resources (hiring, time schedules, training, dismissals, etc.)
- Promote the development of turnover through direct or indirect marketing.

Profil

- You have a hotel management background (indicate level of education),
- You have significant experience in the same position or as an Assistant Room Manager in an establishment of the same level.
- You have good communication skills and are able to manage a small team and pass on your knowledge.
- You are fluent in English.
- You are also familiar with current management software and know how to read and interpret an operating account.
